A Mexican couple, Mango-passion fruit Margarita and Guacamole

At Meshiko, we love food and cocktails and as this weekend the weather will be perfect to be with your amigos, we want to share with you two of our favourite recipes: mango-passion fruit Margarita and guacamole with blue tortilla chips, the perfect couple! We are sure that you will love these recipes, they are very easy to make and full of flavour. Enjoy them!

MANGO-PASSION FRUIT MARGARITA
INGREDIENTS:
  • 1 cup of frozen mango
  • 2 oz. passion fruit puree or coulis
  • One lemon’s juice
  • 2 oz. tequila
 
FROST:
  • 1 teaspoon Salt 
 
DIRECTIONS
Place all the ingredients in the blender, blend. 
Place the salt in a small plate, frost your glass.
Serve the mix from the blender into your cups, and it’s done! ready to enjoy! this recipe is for two cocktails.

GUACAMOLE

INGREDIENTS

  •  2 ripe avocados
  •  1/4 teaspoon salt, plus more to taste
  •  2 tablespoons fresh lemon juice
  •  2-4 tablespoons minced red onion.
  •  2 tablespoons cilantro finely chopped
  •  Pinch freshly ground black pepper
  •  1/2 ripe tomato, chopped (optional)
  •  Blue tortilla chips (you can find them in M&S)

The word “guacamole” is originally from Mexico, where avocados have been cultivated for thousands of years. The name is derived from two Aztec words—ahuacatl (avocado) and molli (sauce).

The trick to making perfect guacamole is using avocados that are just the right amount of ripeness. Not ripe enough and the avocado will be hard and flavourless. Too ripe and the taste will be off.

Check for ripeness by gently pressing the outside of the avocado. If there is no give, the avocado is not ripe yet. If there is a little give, the avocado is ripe. If there is a lot of giving, the avocado may be too ripe and not good.

Cut the avocados in half. Remove the pit. Score the inside of the avocado with a blunt knife and scoop out the flesh with a spoon.  Place in a bowl.

Mash the avocado using a fork, roughly mash the avocado. (Don’t overdo it! The guacamole should be a little chunky.)

Add lime juice, salt and pepper. The acid in the lime juice will provide some balance to the richness of the avocado and will help delay the avocados from turning brown.
 Add the chopped onion and cilantro.   Serve immediately with delicious blue tortilla chip
